Step 1 :

Whisk yoghurt with cold water until completely smooth and thin — Neer Mor should be almost water-like in consistency, not thick like regular chaas.

Step 2 :

Add grated ginger, green chilli, fresh coriander, asafoetida, and salt. Stir well and taste — it should be tangy, lightly spiced, and very refreshing.

Step 3 :

Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and dry red chilli and fry for 30 seconds.

Step 4 :

Pour tadka over the buttermilk and stir well.

Step 5 :

Refrigerate for 15 minutes before serving. Pour into chilled glasses and serve immediately.
