A refreshing coastal classic, Sol Kadhi blends kokum and coconut milk into a naturally cooling summer drink.

Cooking Steps

Sol Kadhi

Step 1 :

Soak kokum in warm water for 30 minutes. Squeeze to extract juice, discard petals. Add garlic and green chilli and infuse for 10 minutes.

Step 2 :

Blend coconut with 1 cup of water. Strain through muslin, squeezing out all the milk.

Step 3 :

Combine kokum extract and coconut milk. Stir until evenly pale pink.

Step 4 :

Season with salt. Add cold water to thin if needed.

Step 5 :

Strain once more, refrigerate for 20 minutes.

Step 6 :

Pour into chilled glasses and garnish with fresh coriander.
