Ingredients

Step 1 :

Place leftover cooked rice in a deep bowl or clay pot. Add 2–3 cups of room temperature water — enough to submerge the rice completely with extra water above it.

Step 2 :

Cover loosely with a lid or plate — do not seal airtight. Leave to ferment at room temperature for 8–12 hours or overnight. In warmer weather, 8 hours is sufficient. In cooler weather, allow the full 12 hours.

Step 3 :

By morning, the water will have turned slightly cloudy, and the rice will be soft, swollen, and mildly tangy — this is the fermentation working and exactly what you want.

Step 4 :

Stir well. Add buttermilk and salt and mix until combined.

Step 5 :

Serve in a deep bowl or glass with thin slices of raw onion and a slit green chilli on the side.
