Cauliflower Mac and Cheese combines roasted cauliflower with creamy, cheesy pasta for a comforting baked dish with extra flavour and texture.

Cauliflower Mac and Cheese

Step 1 : Roast the cauliflower:

Preheat oven to 425°F (220°C). Toss cauliflower, cut into small florets, with olive oil, a pinch of salt, and black pepperon a baking sheet. Spread in a single layer and roast for 20–25 minutes, flipping halfway, until golden and tender.

Step 2 : Cook the pasta:

While the cauliflower roasts, bring a large pot of salted water to a boil. Cook elbow macaroni or pasta of choice until just al dente (10 minutes less than package directions). Reserve pasta water, then drain and set aside.

Step 3 : Make the roux:

In a large saucepan over medium heat, melt unsalted butter. Whisk in all-purpose flour and cook for 1–2 minutes until lightly golden and nutty-smelling.

Step 4 : Build the cheese sauce:

Gradually whisk whole milk and heavy cream into the roux, a little at a time, until smooth. Cook over medium heat, stirring frequently, until the sauce thickens enough to coat the back of a spoon, about 5–7 minutes.

Step 5 : Add cheese and seasoning:

Remove the pan from the heat. Stir in sharp cheddar cheese, shredded, gruyère cheese, shredded, garlic powder, smoked paprika, Dijon mustard, salt, and black pepper until the cheese is fully melted and the sauce is silky smooth. Add a splash of reserved pasta water if the sauce is too thick.

Step 6 : Combine everything:

Fold the cooked pasta and roasted cauliflower, cut into small floretsinto the cheese sauce until evenly coated. Transfer to a greased 9x13-inch baking dish.

Step 7 : Add the topping and bake:

Mix panko breadcrumbs and parmesan cheese, grated together and sprinkle evenly over the top. Bake at 375°F (190°C) for 20–25 minutes until the topping is golden and the sauce is bubbling around the edges.

Step 8 : Rest and serve:

Let the mac and cheese rest for 5 minutes before serving. Garnish with fresh chives or parsley, chopped (for garnish) and serve warm.
