Millet-stuffed peppers bring together fluffy millet, vegetables, and beans baked inside tender bell peppers for a wholesome, low-calorie meal that feels both hearty and light.

Millet-Stuffed Peppers

Step 1 : Cook the millet:

In a small saucepan, combine millet, rinsed and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 18–20 minutes until the liquid is absorbed and the millet is fluffy. Remove from heat and let sit covered for 5 minutes.

Step 2 : Preheat oven and prep peppers:

Preheat your oven to 375°F (190°C). Slice the tops off bell peppers (any colour) and remove seeds and membranes. Place peppers cut-side up in a baking dish. Drizzle lightly with olive oil and season with a pinch of salt.

Step 3 : Sauté the vegetables:

Heat olive oil in a large skillet over medium heat. Add yellow onion, diced and cook until softened, about 4–10 minutes. Add garlic cloves, minced and zucchini, diced and cook for another 3 minutes. Stir in cherry tomatoes, halved and cook for 2 more minutes.

Step 4 : Make the filling:

Add canned black beans, drained and rinsed, smoked paprika, cumin, salt, and black pepper to the skillet and stir to combine. Fold in the cooked millet and lemon juice. Taste and adjust seasoning as needed.

Step 5 : Stuff and top the peppers:

Spoon the millet filling generously into each pepper, pressing it down and mounding it slightly at the top. Sprinkle shredded mozzarella or cheddar cheeseevenly over each stuffed pepper.

Step 6 : Bake:

Cover the baking dish loosely with foil and bake for 40 minutes. Remove foil and bake for an additional 10–15 minutes until the peppers are tender and the cheese is golden and bubbly.

Step 7 : Garnish and serve:

Remove from the oven and let cool for 5 minutes. Garnish with fresh parsley, chopped (for garnish) and serve warm.
