2 tbsp Cornstarch 3 tbsp Cold water

1 tbsp Soy sauce 1 tsp Sesame oil

0.5 tsp Fresh ginger, grated 0.3 tsp White pepper

0.5 tsp Salt 2 nos. Green onions, thinly sliced

Step 1 : Prepare the slurry and eggs:

In a small bowl, whisk together of cornstarch and cold water until smooth. In a separate bowl, beat eggs well and set aside.

Step 2 : Heat the broth:

Pour chicken broth into a medium saucepan over medium-high heat. Add soy sauce, fresh ginger, grated, white pepper, and salt. Bring to a gentle boil.

Step 3 : Thicken the broth:

Stir the cornstarch slurry once more, then slowly pour it into the boiling broth while stirring constantly. Reduce the heat to medium and stir until slightly thickened.

Step 4 : Create the egg ribbons:

Reduce the heat to low. Using a fork or chopstick, slowly drizzle the beaten eggs into the soup in a thin, steady stream while stirring the broth gently in one direction. The eggs will cook immediately into soft, silky ribbons.

Step 5 : Finish and serve:
