A classic Indian payasam prepared with dehulled proso millet, milk, and aromatic cardamom for a comforting sweet finish.

Cooking Steps

Proso Millet Payasam

Step 1 :

Cook the dehulled proso millet in 2 cups water for 5 minutes until soft. Drain and keep aside.

Step 2 :

Heat ghee in a pan and roast the dry fruits until golden. Set aside.

Step 3 :

Boil the milk in a thick-bottomed pan, add the cooked millet and sugar.

Step 4 :

Stir gently and cook for 10–15 minutes on low flame until well cooked and slightly thick.

Step 5 :

Add cardamom powder, garnish with roasted dry fruits, and mix well.

Step 6 :

Serve hot as a traditional sweet.
