Kodo Millet Adai

A hearty South Indian adai made with kodo millet and mixed dals, offering a satisfying bite with crisp edges and robust flavour.

Cooking Steps

Method

Step 1 :

Wash and soak all the soaking ingredients together for 4 hours. Drain well.

Step 2 :

Grind red chillies and fennel seeds with a small portion of the soaked mixture, adding little water, to a coarse batter.

Step 3 :

Add the remaining soaked mixture and grind lightly. The batter should be slightly runny, thicker than dosa batter but thinner than idli batter.

Step 4 :

Mix in chopped onion, curry leaves, coriander leaves, mint leaves, and salt.

Step 5 :

Heat an adai or dosa pan, grease lightly with oil, pour a ladle of batter, and spread gently into a thick circle.

Step 6 :

Cook on medium flame until golden brown and crisp around the edges. Drizzle oil if needed and flip to cook the other side.

Step 7 :

Serve hot with chutney of your choice.
