Foxtail Millet Mango Rice

A tangy, comforting millet rice prepared with raw mango and simple South Indian seasoning.

Cooking Steps

Foxtail Millet Mango Rice

Step 1 :

Cook the foxtail millet in water until soft and fluffy. Spread on a plate and allow it to cool.

Step 2 :

Heat oil in a pan, fry the groundnuts until golden, and keep aside.

Step 3 :

In the same oil, add mustard seeds, black gram dal, green chillies, curry leaves, turmeric powder, and asafoetida. Let the seasoning splutter.

Step 4 :

Add grated raw mango and sauté for a minute.

Step 5 :

Add salt and mix well.

Step 6 :

Add the cooked and cooled millet, mix gently.

Step 7 :

Add fried groundnuts, mix well, and switch off the flame.

Step 8 :

Tangy mango rice is ready. Serve hot.
