Crispy, flavourful cutlets made with barnyard millet, vegetables, and mild spices—perfect as a snack or starter.

Cooking Steps

Barnyard Millet Cutlet

Step 1 :

Cook barnyard millet in boiling water until soft. Drain, fluff with a fork, and keep aside.

Step 2 :

Mix channa dal flour powder with curd to a smooth paste.

Step 3 :

Boil the vegetables and keep aside.

Step 4 :

Heat oil in a pan and sauté finely chopped onion, green chilli, garlic, and ginger until onions turn transparent.

Step 5 :

Add cooked vegetables, salt, pepper powder, turmeric powder, and mix well.

Step 6 :

Add cooked barnyard millet and chopped coriander leaves. Mix well and cook for a few seconds.

Step 7 :

Switch off the flame and allow the mixture to cool.

Step 8 :

Divide the mixture equally, shape into cutlets, coat with bread crumbs if required, and shallow fry on both sides until golden brown (or deep fry in oil).

Step 9 :

Serve hot with sauce.
