A fragrant one-pot pulao made with kodo millet, vegetables, and whole spices, ideal for a light yet satisfying meal.

Cooking Steps

Kodo Millet Pulao

Step 1 :

Heat a small pressure cooker and sauté with oil. Add cinnamon, fennel seeds, and bay leaf.

Step 2 :

Stir well and add onion and ginger garlic paste. Sauté until onions turn translucent.

Step 3 :

Add the chopped vegetables, mint leaves, and salt. Mix well.

Step 4 :

Add the washed and drained kodo millet, mix well, and sauté briefly.

Step 5 :

Add 1.5 cup water and salt, bring to a boil, mix well, and pressure cook for 1 whistle on medium to low flame.

Step 6 :

Switch off the flame, allow pressure to release naturally, and fluff gently.

Step 7 :

Serve hot, garnished with coriander leaves.
