Vietnamese Spring Rolls

Fresh vegetarian Vietnamese rolls are light, healthy wraps made with rice paper filled with crisp veggies, noodles, and served with a flavourful sweet chilli sauce.

Monaco Bites

Step 1 :

Cook the pasta or rice noodles and let them cool.

Step 2 :

Slice all the vegetables as mentioned.

Step 3 :

Dip one rice paper sheet in warm water for 5–7 seconds until soft.

Step 4 :

Place the softened sheet on a flat surface.

Step 5 :

Add lettuce, noodles, vegetables, olives, and spring onion greens in the centre.

Step 6 :

Fold the bottom over the filling, then fold in the sides.

Step 7 :

Roll tightly upward like a burrito.

Step 8 :

Repeat with the remaining rice paper sheets.

Step 9 :

Cut the rolls into halves.

Step 10 :

Drizzle sweet chilli sauce and garnish with chopped roasted peanuts and spring onion greens.
