A protein-rich, nutty delight, this Paneer Pista Burfi is a lighter take on a classic Indian mithai.

Cooking Steps

Paneer Pista Barfi

Step 1 :

Bring the cashews to room temperature, if stored in the refrigerator. The cashews should be dry.

Step 2 :

Grind the cashews into a fine powder by pulsing it at regular intervals.

Step 3 :

Take palm jaggery and melt it in a pan with water. Heat until the jaggery gets dissolved and bring it to boil to make a syrup of 1 sting consistency by checking it between the thumb and index finger.

Step 4 :

Add the cashew powder to the syrup and mix well. Keep the flame low. Cook until it reaches a soft dough consistency.

Step 5 :

Transfer the mixture in a baking tray lined with parchment paper.

Step 6 :

Once the mixture is cool enough to work with, knead it in a dough and cover it with another parchment paper and roll with a rolling pin to a required thickness.

Step 7 :

Cover with silver foil and cut into diamond shapes.
