Korean Gochugaru Eggplant is a sizzling stir-fry recipe with a touch of sesame magic.

Cooking Steps
Korean Gochugaru Eggplant
Step 1 :
Rinse the eggplants and pat them dry. Cut off the stems and slice them into medium pieces.
Step 2 :
Mince the garlic, and finely chop the onion.
Step 3 :
Heat oil in a pan over medium-high heat.
Step 4 :
Once the oil is hot, add the sliced eggplants to the pan. Fry until they are golden brown and tender, turning occasionally, about 5-6 minutes. After frying the eggplants, set them aside.
Step 5 :
To make the sauce, add minced garlic and chopped onion to the same pan. Saute until the onion turns translucent.
Step 6 :
Now add soy sauce, tomato sauce, sugar, black pepper, gochugaru powder and salt. Stir it well.
Step 7 :
Add the fried eggplants and cook for another 2-3 minutes until the sauce is slightly thickened and the eggplants are coated well.
Step 8 :
Sprinkle sesame seeds over the eggplants for decoration.
Step 9 :
Transfer it to a serving dish. Serve hot.
