Cooking Steps

Torani Kanji

Step 1 :

In an earthen pot take mashed cooked rice, add water & dried mango pieces & keep it overnight covered at room temperature to ferment.

Step 2 :

Sauté vegetables - Pumpkin, okara, raw papaya & brinjal in oil, add salt & turmeric powder then stir fry till vegetables are cooked & keep aside.

Step 3 :

Heat a kadhai add the prepared fermented rice water into it, add turmeric powder, add salt mix & boil over medium heat then add dried mango pieces.

Step 4 :

Add the prepared stir-fried vegetables to the rice water mix in Kadhai, and boil over medium heat for 1 minute.

Step 5 :

Prepare to temper by adding mustard oil followed by adding the panch phoron (cumin seeds, nigella seeds, meethi seeds, fennel seeds & mustard seeds) quickly followed by curry leaves, dried chillies & grated garlic & tempering is ready.

Step 6 :

Pour the prepared kanji (fermented rice water soup) over the contents of the tempering then add red chilli powder and boil for 2 minutes on medium heat.

Step 7 :

Serve hot.
