Pumpkin Curry (Gummadikaya Pulusu)

A deliciously spicy, tangy and slightly sweet Andra-style stew made with pumpkin.

Pumpkin Curry

Step 1 :

Wash the pumpkin thoroughly, cut it into cube-sized pieces without peeling the skin and remove the seeds.

Step 2 :

Now Heat the Kadai and add oil and add cardamom, cinnamon sticks, cloves, mustard and jeera seeds. Once they turned brown, add onion pieces and green chilli and fry for 5 minutes.

Step 3 :

After the onions turn in to slight brown, add turmeric powder and pumpkin pieces and further fry them for 5 more minutes.

Step 4 :

Further add chilli powder, ginger garlic paste, coriander powder, garam masala, salt, tamarind paste, and jaggery powder. Fry everything for 5 minutes, add water and place the lid and boil the curry for 5 more minutes.

Step 5 :

Now add roasted peanuts powder, mix thoroughly and cook till the pumpkin pieces are soft.

Step 6 :

Once the oil leaves the sides and the pumpkin pieces are cooked thoroughly, switch off the flame. Now the delicious pumpkin masala curry is ready. It's best served hot.
