Veg Burrito Bowl

A healthy and wholesome authentic Mexican meal in a bowl.

Ingredients

Rice

Refried Beans

Tomato Salsa

Homemade sour cream

Other ingredients for decoration

Cooking Steps

Rice

Step 1 :

Heat sunflower oil in a pan, add chopped onion & fry until translucent.

Step 2 :

Then add chopped mushrooms, add peri peri mix & chilli flakes. Sauté for a few minutes.

Step 3 :

Now add boiled sweet corn, chopped bell peppers & green capsicum. To this, add salt to taste. Sauté for a few minutes.

Step 4 :

After that add tomato ketchup & mix well. Now add cooked Basmati rice & mix properly. Rice is ready to be kept aside.

Refried Beans

Step 1 :

Blanch 2 medium Tomatoes, cool and remove skin. Blend and make puree. Pressure cook soaked kidney beans or Rajma with salt until 3-4 whistle on low flame or until soft & mashy. Heat oil in a pan, add chopped garlic, chilli flakes & onion, sauté for a few minutes, add blanched tomato puree & cook for 5 min. Add boiled rajma and cumin powder & cook on a medium flame for 5 min. Now add boiled rajma water & cook for another 5 min. or until dry. Refried Beans are ready to be kept aside.

Tomato Salsa

Step 1 :

Roast 2 big Tomatoes on a gas flame, cool & remove skin & seeds. Finely Chopped the roasted tomatoes & keep them in a bowl, add chopped onion, chopped garlic, chopped green chillies, chopped red & yellow bell peppers, chopped, cucumber, chopped fresh coriander leaves, tomato ketchup, lemon juice & salt to taste. Mix together properly. Tomato Salsa is ready, keep it aside.

Homemade sour cream

Step 1 :

In a mixing bowl, add hung curd, lemon juice, black pepper powder & salt to taste. Mix together properly and homemade sour cream is ready. Keep aside.

Other ingredients for decoration

Step 1 :

Now it's time to layering, take a glass bowl, first put prepared Rice, slightly press & fill the 1/4 portion of the bowl. After that put prepared refried Beans all over the rice mixture. Then fill with homemade sour cream all over the beans mixture. Last but not least fill with prepared Tomato Salsa. Layering is completed now it's time to decorate, first, sprinkle grated processed cheese all over the bowl, then arrange some sliced black Olives & chopped Jalapeno peppers & some crushed Nacho chips. Finally, Garnish with fresh coriander leaves & Nacho chips.
