Ginger Lemongrass Thai Soup

Step 1 :

Cook wild rice.

Step 2 :

Cut tofu into cubes and marinate in a mixture of 1/4 cup soy sauce, 1 tbsp of maple syrup and 1 tbsp of sesame oil. Cook in a frying pan until.

Step 3 :

Heat 1 tbsp oil in a pot.

Step 4 :

Dice a yellow onion and throw it in.

Step 5 :

Slice green onions and throw the whites in.

Step 6 :

Mince garlic and ginger and throw in.

Step 7 :

Peel 2 carrots and cut them into small coins. Throw it into the pot.

Step 8 :

Take one lemongrass stalk and put it into the pot. Let veggies simmer until soft.

Step 9 :

Add 4 cups veggie broth and 1 can of lite coconut milk and simmer.

Step 10 :

Top with rice, tofu, peanuts, cilantro, green onion and a bit of lime juice.
