Crispy fried chicken tenders with a spicy coleslaw in soft bread.

Step 1 :

Cut the chicken breast in half. You need to slice it diagonally to get thinner pieces.

Step 2 :

Hit it with the back of a knife to make it tender.

Step 3 :

Rub it with salt, pepper and 5 spice powder and set aside for 10 minutes.

Step 4 :

Meanwhile beat the eggs with a pinch of salt. Ready the flour, eggs and panko in trays.

Step 5 :

Coat the chicken with flour, dip in eggs and coat with panko. Fry at medium low heat till golden brown on both sides.

Step 6 :

To assemble, mix the mayo, cabbage, chilli oil and salt to taste till you get a creamy coleslaw.

Step 7 :

Butter 4 slices of bread generously and apply the coleslaw on the other 4 slices.

Step 8 :

Place the fried chicken on the coleslaw bread and place the buttered bread on top. Slice away the edges and open the sando into halves.
