A modern twist to the age-old aamras

Step 1 :

Take a clean cloth and pour curd in that, squeeze it so that excess water comes out.

Step 2 :

When all water is out from the cloth, keep the hung curd in the fridge for sometime to set.

Step 3 :

Hung curd is ready, take it out and slightly beat it with a spoon when assembling.

Step 4 :

Clean the mango thoroughly in water. Save some cubes for garnish, and then squeeze out all the pulp from the mango.

Step 5 :

Blend this pulp nicely into a purée with jaggery powder and cardamom.

Step 6 :

Layer powdered digestive biscuits in a glass.

Step 7 :

Put the layer of hung curd, (with help of a spoon or your can fill it in a piping bag or corner cut of an empty milk packet),

Step 8 :

Then make the aamras layer. Add the mango cubes. Repeats till desired numbers or layers are formed.

Step 9 :

The top layer must be hung curd, with garnish of saffron strands, almonds, cashews, chia seeds and few mango cubes.
