Veggie Pasta and Pan Fried Prawns

An interesting dish that combines both the Asian and Western flavors having 3 elements which tastes great individually as well as together. The addition of olive oil in all the 3 of them renders not only an unique flavor to the dish but also makes it healthier.

Step 1 : For the pasta

Cook the pasta in boiling water with salt and 1 tbsp olive oil till done, drain and keep aside.

Step 2 :

Heat 4 tbsp olive oil in a pan add garlic, chili flakes and 1/2 cup onions, cook on low heat for a while add all the other vegetables and cook for 3-4 minutes.

Step 3 :

Combine together the flour and milk into a mixture, melt butter in a pan and add the flour-milk mixture cook till semi thick.

Step 4 :

Now add the flour-milk mixture to the vegetables add the pasta season with salt, 1 tsp pepper and mixed herbs now set aside.

Step 5 : For the pan fried prawns

Marinate the prawns with all the ingredients except oil for 30 minutes.

Step 6 :

Heat a nonstick pan and brush with 4 tbsp olive oil place the prawns in the pan and pour 2 tbsp olive oil over them and cook for 4-5 minutes, do not over cook. The prawns are now ready.

Step 7 : For the olive oil and coconut dip

Heat 1 tbsp olive oil in a pan, add curry leaves and chill flakes, once they start spluttering add 2 tbsp finely chopped onions, garlic powder and sauté add salt and cook for a while.

Step 8 :

Add coconut milk and 2 tbsp lemon juice cook on low heat for 2 minutes, remove from heat and allow it to cool, the dip is ready.

Step 9 :

Arrange pasta on a plate along with the pan fried prawns accompanied with the olive oil and coconut dip. The dish is ready to be served.
