Hyderabadi Veg Dum Biryani

Hyderabadi veg dum biryani is a sumptuous rice dish made of mixed veggies, herbs and spices giving it spicy, sweet and tangy flavours all in one! It is a great option for a formal dinner and can also be served as main meal. Rice, fragrant whole spices, and vegetables are layered and cooked together on low flame till the rice turns fluffy and soft.

Step 1 :

Prepare the rice. Soak the rice in water for about 20 minutes. Drain, rinse and set aside.

Step 2 :

Now, take a large vessel and fill it with water. Add in the whole spices. Add 1 tablespoon of oil.

Step 3 :

Transfer the rice into this vessel and heat until the rice is about 70-75% cooked. This should take about 10 minutes. Drain, pour in 1/2 a tablespoon of ghee and set aside.

Step 4 :

Boil the vegetables. Add all the vegetables to the biryani and place them in a bowl of water and boil them until they are soft. Alternatively, you may place them in a cooker and cook for two whistles or so.

Step 5 : To prepare the tomato gravy

Roughly chop tomatoes. Take a pan and heat 2 tablespoons of oil.

Step 6 :

Add the tomatoes, 1 teaspoon of red chilly powder, and 1/2 a teaspoon of jeera powder, cashew nuts, coriander powder, garam masala and turmeric powder. Cook until the tomatoes become soft.

Step 7 :

Allow the contents of the pan to cool, then place in a blender and process until a smooth puree is obtained.

Step 8 :

Making the biryani masala. Take about 3 tablespoons of oil and 1/2 tablespoon ghee in a pan and heat. Add the ginger-garlic paste and sauté for a minute.

Step 9 :

Add 1 teaspoon of garam masala, one teaspoon of red chilly powder, 1/2 a teaspoon of jeera powder, coriander powder, and turmeric powder. Then, pour in the tomato gravy. Stir for a minute or so.

Step 10 :

Mix in the curd and stir for another minute or so. Next, add all the vegetables, salt, and butter and stir for another 5 minutes. If required, add some water and adjust the consistency.

Step 11 :

Lastly, add the lemon juice and chopped coriander leaves. The biryani masala is now ready.

Step 12 : To assemble

Take a heavy bottom pan. Grease it with ghee and add a layer of the biryani masala (half of it). Cover it with a layer of rice (half the rice quantity). Top with some fresh mint leaves. Add a couple of teaspoons of saffron milk (optional).

Step 13 :

Add the rest of the biryani masala to make another layer and cover it with the remaining rice. Once again, top the rice layer with mint leaves and saffron milk.

Step 14 :

Cover the vessel and cook for 20 minutes on low flame. Scoop out the biryani and enjoy!
