Deep fried rolls stuffed with grated coconut making a nutrient and energy dense starter a fun party snack.

Step 1 : For the stuffing

In a bowl, add 2 tbsp grated fresh coconut, 1 tbsp chopped mint leaves, 1/4th tsp green chilly paste, 1/4th tsp grated ginger, 1/8th tsp salt, 1/2 tsp lemon juice, 1/2 tsp coriander leaves and mix well.

Step 2 : For the outer cover

In a bowl, add 1/2 cup boiled, mashed potato, 1 tbsp corn flour and knead into a dough.

Step 3 :

Flatten the dough with your fingers.

Step 4 :

In a small portion, stuff the prepared mixture.

Step 5 :

Shape into rolls, coat with 2 tsp breadcrumbs.

Step 6 :

Heat oil for frying, deep fry until golden brown on all sides.

Step 7 :

Serve hot rolls with any dip of your choice.
