Spicy Corn on the Cob Biryani

This is a simple, easy biryani with fresh sweet corn adding to the texture and flavour.

Step 1 :

Wash and soak rice in water.

Step 2 :

Peel the outer layer of the corn. Cut the corn cob in 2 inch long pieces.

Step 3 :

Grind 1 mace, 1 star anise, 1 cinnamon stick, 10-15 peppercorns, 3 cardamom, 3 cloves, 1 tsp cumin seeds together into a fine powder.

Step 4 :

Soak saffron strands in milk.

Step 5 :

Add oil to the pan, then add garam masala powder and fry for 2 minutes.

Step 6 :

Then, add onions and roast them till brown.

Step 7 :

Now, add ginger garlic paste, green chillies, turmeric powder, chilli powder and saute it for 3 minutes.

Step 8 :

Add sweet corn pieces and curd and water and salt as required.

Step 9 :

Mix everything and keep the lid and boil the rice till done for around 15 minutes.

Step 10 :

Once the rice is thoroughly cooked, add saffron strands, milk and ghee and mix well.

Step 11 :

Add freshly chopped coriander leaves and spicy corn on the cob biryani is ready to serve.
