Phirni is the most preferred Iftar dessert during Ramadan. Besides being a rich source of vitamin A, proteins and calcium, phirni also acts as a stomach coolant, which is a relief after long hours of fasting.

Step 1 :

Soak almonds in water the previous day so that they can be peeled and halved easily, the next day.

Step 2 :

Grind the rice flour a day before so that it becomes completely devoid of moisture.

Step 3 :

Add milk to a utensil (preferably aluminium) and add water and rice flour to it.

Step 4 :

Keep stirring and now switch on the flame.

Step 5 :

Keep stirring to avoid lump formation.

Step 6 :

Add sugar.

Step 7 :

Once the mixture thickens a bit, add the ground cardamom cloves.

Step 8 :

Keep stirring till it bubbles up.

Step 9 :

Transfer the contents to small bowls as per convenience.

Step 10 :

Add almonds and top it up with khus khus.

Step 11 :

Let it cool before keeping it in the fridge. The Phirni is ready to serve. It tastes best when consumed on the same day.
