Coconut Stuffed Steamed Banana Cakes

This is a traditional Thai dessert recipe that is made with palm sugar and coconut that gives a distinct flavour.

Step 1 :

Tear the banana leaf along the center and cut it into 8 inch wide pieces.

Step 2 :

Prepare the stuffing by mixing together freshly grated coconut, toasted sesame seeds and palm sugar. Keep it aside.

Step 3 :

Mash the bananas with masher to make a smooth lump free mash.

Step 4 :

To the mash, add rice flour, tapioca flour, coconut milk and salt. Mix well to make a thick batter. Add more coconut milk if required. The batter should not be too runny.

Step 5 :

Pour in 1 ladle of the flour mixture in the middle of the prepared banana leaf and spread over to make a 4 inch disc of ½ inch thickness.

Step 6 :

Spoon in 2 tsp of the coconut stuffing in the middle of the disc.

Step 7 :

Gently fold the leaf into two to make a rectangle and flap across the corners to seal it.

Step 8 :

Place the leaves flat on a steamer plate and steam the packed leaves for about 20 minutes.
