Thai Prawn Curry with Sticky Rice

This is a simple yet flavorful recipe, good for lunch or dinner.

Step 1 : To make Thai Prawn Curry

Heat the olive oil in a deep frying pan.

Step 2 :

Add garlic, chilli and ginger and saute it for 3 minutes.

Step 3 :

Add chopped capsicum and potato and cook for another 8 minutes.

Step 4 :

Add the red curry paste, fish sauce and coconut milk to it.

Step 5 :

Season it with salt and black pepper and allow it to simmer for 3 minutes.

Step 6 :

Add the prawns and cook it for around 6-8 minutes until they are pink and cooked through.

Step 7 :

Garnish it with chopped coriander leaves and switch off the flame.

Step 8 : To make sticky rice

Wash the rice well with water and place it in the rice cooker, add required amount of water and stir well.

Step 9 :

Let the rice stand for at least 1 hour.

Step 10 :

Add the salt and stir once more and turn on rice cooker.

Step 11 :

When the rice cooker switches off, let the rice sit for at least 10 minutes before serving it.
