Thai Chicken Curry with Veggies

This is a traditional Thai chicken curry recipe loaded with vegetables. It can be served with hot Thai Fried rice.

Step 1 :

Make a paste of soaked whole dry red chilli, coriander leaves, lemon grass, chopped galangal, garlic, lemon juice, kaafir lime leaves, cumin seeds, pepper powder and coriander seeds. Make a smooth paste of it.

Step 2 :

Now heat oil in a pan, add onion and all the chopped vegetables in it. Toss it for few minutes.

Step 3 :

Add red paste and salt in it. Then, add chicken and chopped basil leaves.

Step 4 :

After few minutes, add coconut milk, fish sauce, chopped basil leaves and lemon zest. Mix it well.

Step 5 :

Finally, add lemon juice. Cook it for few more minutes. Check the gravy and switch off the flame.

Step 6 :

Serve this delicious dish with hot Thai fried rice.
