Try this healthy tuna salad with sweet potato and basil that is easy to prepare and tastes delicious.

Step 1 :

Par boil sweet potatoes in a vessel along with water and salt.

Step 2 :

Once the potatoes are cooked, drain the water and keep it aside.

Step 3 :

Brush the potatoes with canola oil. Sprinkle salt and pepper over the potatoes.

Step 4 :

Grill the potatoes on medium heat on both sides for about 15-20 minutes.

Step 5 :

Cut the potatoes into chunks and keep it aside. Meanwhile, take a vessel and boil 2 carrots in water. After the carrots are cooked, shred with fingers and set it aside.

Step 6 :

In another vessel, boil blacked-eyes peas with water and salt. Once done, drain the water and keep it aside.

Step 7 :

In a large bowl, add boiled black-eyed peas, canned tuna including the oil, shredded carrot, apple cider vinegar, chopped basil, salt, 2 tbsp canola oil and cooked sweet potato chunks.

Step 8 :

Toss it well using a spoon and serve.
