This is an easy to make Bengali Egg Curry recipe. It tastes delicious and can be made effortlessly.

Step 1 :

Boil the eggs, shell them, pierce them with a fork and fry them in oil till it turns brown from outside. Once done, keep it aside.

Step 2 :

In a pan, heat oil, add mustard seeds, cumin seeds and curry leaves. Fry until it starts sputtering.

Step 3 :

Add chopped onions, green chillies and salt, saute until the onions turn translucent.

Step 4 :

Add ginger garlic paste and saute till the raw smell is gone and you smell the aroma.

Step 5 :

Add tomatoes and a little salt, saute till tomatoes become pulpy and tender.

Step 6 :

Add red chilli powder and saute for 1 minute.

Step 7 :

Add the eggs and turmeric powder, saute it on high flame for about 2 minutes.

Step 8 :

Add water and garam masala, mix it well and cook for about a minute or two.

Step 9 :

Cook till the eggs are done and the gravy is rich. Add coriander leaves and serve it hot.
