This dish is a refreshing, easy to make, vegan appetizer that doesn't require any cooking.

Step 1 :

Chop the ends of the zucchini, use a vegetable peeler to peel thin slices along the length.

Step 2 :

Pat the slices with a paper towel to slightly dry them.

Step 3 :

To prepare cashew nut sour cream, blend cashew nuts, avocado, lemon juice and salt for few minutes till it forms a smooth paste.

Step 4 :

Spread the cashew nut sour cream onto zucchini slices with the help of a knife.

Step 5 :

Arrange the cut vegetables and coriander leaves at one end of the zucchini slice, sprinkle salt and pepper.

Step 6 :

Then simply roll the slices.
