How about trying these amazing low carb eggplant pizza. These eggplant pizzas are easy to make gluten-free pizza for people following a gluten-free diet.

Step 1 :

Wash the brinjal, wipe it and slice it. Keeping a thickness of ½ inch and slice the brinjal.

Step 2 :

Place these slices on a kitchen towel. Sprinkle some salt on each slice, on both the sides and let them rest for 30 minutes.

Step 3 :

Preheat the oven at 200 °C.

Step 4 :

Once the brinjal slices releases the water, using a paper towel, wipe the excess water.

Step 5 :

Grease a baking tray with butter and arrange the slices on it.

Step 6 :

After 15 minutes, take the tray out from oven. Spread pizza sauce on each slice and top it with cheese.

Step 7 :

Broil these pizza slices for 5 minutes at 200 °C.

Step 8 :

Your gluten free low carb eggplant pizza is ready.
