Step 1 :
In a bowl, add maida, wheat flour, mashed potatoes, cheese, basil, chilli flakes and oregano. Mix it well together to ensure the ingredients blend in well.
Step 2 :
In another bowl, beat the egg, add milk, 1 tsp melted butter, salt and pepper. Whisk the ingredients well together.
Step 3 :
Now, add the egg mixture to the flour mixture and continuously stir till a smooth batter is formed. Ensure there are no lumps formed. If the batter is too thick, add more milk to balance it well.
Step 4 :
Once the mixing is over, allow the batter to rest for 5 minutes. Do not over mix the batter for too long.
Step 5 :
Heat a frying pan on medium flame and add 1 tsp of butter. Melt the butter and grease the pan evenly.
Step 6 :
Pour a ladle-full in the hot pan and allow it to spread on its own.
Step 7 :
After a couple of minutes, turn over and cook on the other side.
Step 8 :
Stack on a plate and enjoy them with any preferred syrup.
