Fruity Tea Loaf

This tea cake has a combination of brewed tea along with mixed dry fruits and brown sugar.

Step 1 :

In a vessel, boil water and add tea leaves to it. Once done, strain it into another vessel and set aside.

Step 2 :

Take a sauce pan, add mixed dry fruits, sugar, butter, tea masala and the tea prepared earlier. Cover and heat it gently until the butter has melted, stirring occasionally.

Step 3 :

Increase the heat and boil the mixture for a minute. Remove the pan from the heat set aside to cool. Cover and leave the mixture overnight at room temperature.

Step 4 :

Next day, sift maida twice along with salt and baking powder. Set it aside.

Step 5 :

Fold the sifted flour into the fruit mixture. Mix it well. Spoon the chunky dough into a greased baking dish and level its surface.

Step 6 :

Bake the mixture for 50-55 minutes, in a pre-heated oven at 180c. Check it with a skewer, once inserted it needs to come out clean.

Step 7 :

Remove the cake from the oven, leave it to cool down at room temperature.

Step 8 :

Take it out and slice it, if preferred top it with butter or honey.
