Pinky Aloo Cheese Modhak

Crispy, crunchy on the outside, soft in the inside, with an ooey-gooey cheesy centre, This savory Modhak, made for this Ganesh Chaturthi, is a perfect snack/starter recipe.This is loaded with vegetables for the outer covering and chilli cheese and corn for the center filling. As we bit into this delicious snack, the spicy veggie covering hits our taste buds followed by the soft cheesy core. This has loads of vegetables in disguise, making it a perfect snack for kids, with the right combination of taste and health.

Step 1 :

Steam the vegetables for 10-15 mins. Please check in between , by inserting a fork to make sure the vegetables are cooked. Once they are done, please remove them off the steam. Make sure the vegetables do not take up a lot of water. We will have a difficult time forming Modhak.

Step 2 :

Boil the sweet corn, until they are plump , juicy and sweet. This might take 15 minutes. You can cook the corn and steam the vegetables in parallel. Filter the excess water and Allow it to cool.

Step 3 :

Grate the steamed potato, carrot, beetroot. Grind the green peas. Mix the peas and grated vegetables and mash well. Make sure there are no lumps of any vegetables.

Step 4 :

Add the dry spices – red chilli powder, cumin powder, turmeric powder, coriander powder, garam masala powder and salt to taste. Mix well.

Step 5 :

If the mixture is wet and sticky, add rice flour for binding. Mix well.

Step 6 :

Grind the cooled corn into a coarse mixture. Add the cheese, Green chillies, Capsicum and salt as required for this filling. Please have a check on the salt as cheese might be salty. Mix well. This will be sticky. That is totally fine.

Step 7 :

Take a big ball of outer filling and make a dent in the center.

Step 8 :

Fill in with 1 tsp - 1/2 tsp of filling and roll into a smooth ball. Shape it with your hands in the form of modhak or place the ball inside the Modhak mould and make Modhaks. Make sure the filling does not ooze out while making modhaks. If it happens, please seal it properly.

Step 9 :

Dip the modhaks in the maida paste , make sure the paste is coated well on all sides and deep fry it.

Step 10 :

Please make sure the oil is in Medium heat temperature. The oil must not be very hot because the veggies are already cooked and the modhaks will be very soft. Do not try to flip immediately after adding the modhaks, it might break the modhaks,. Softly turn them in the hot oil after a minute or two and make sure they are crispy on the outside.

Step 11 :

Remove them off the heat and roll them on the lightly toasted sesame seeds, with light hands.

Step 12 :

Serve hot with Ketchup.
