Roast Pumpkin Soup

A flavourful and healthy soup! The pumpkins are roasted with seasonings for a unique taste.

Preparation

Step 1 :

Mix the pumpkin, crushed garlic, onion, red chillies, coriander seeds with 1-2 tablespoon of olive oil.

Step 2 :

Spread on a baking tray and sprinkle salt.

Step 3 :

Pop into the oven at 200-degree Celsius for 25-30 minutes.

Step 4 :

Take out the baked and tender pumpkin. Let it come down to room temperature before pureeing it in a blender.

Step 5 :

You can run the purée through a sieve (if you like your soup smooth) or use it as is. Mix in the veg stock or water with the purée.

Step 6 :

Bring to a boil and let it simmer for a few minutes for the flavours to blend.

Step 7 :

Adjust seasoning and serve hot garnished with olive oil, chilli flakes and fried garlic (fried in olive oil).
