Cooking Steps

Preparation

Step 1 :

In a large degchi (round, deep, broad-rimmed pan) add cleaned and washed meat, both the potlis (mentioned in the ingredients section) and salt.

Step 2 :

Add 2 1/4th glass of water for each glass of rice. Bring to a boil and reduce the flame to sim. Let it cook till the meat is almost done.

Step 3 :

In the meanwhile, in a small pan, add a teaspoon of ghee. Then add green cardamoms, clove, mace and nutmeg.

Step 4 :

Fry lightly and then add to the fried onions.

Step 5 :

Grind these together and make it into a fine paste by adding little water.

Step 6 :

Take out the potlies from the yakhni.

Step 7 :

Squeeze lightly to bring out the juices.

Step 8 :

Add the fried onion paste to the prepared yakhni.

Step 9 :

Mix well. Add kewra drops and the lemon juice.

Step 10 :

Bring to a boil and add the soaked drained rice.

Step 11 :

Let it boil again and then stir lightly. Cook on a high heat till the water is almost evaporated. At this stage, bring the flame to a sim. Pour ghee all around and sprinkle saffron paste.

Step 12 :

Cover tightly and put on the dum (seal) till the rice is cooked.
