Lucknowi Vegetable Royal Paneer Tikka Biryani

My very own recipe, this biryani is for those who are vegetarian and like paneer and biryani.

Cooking Steps

Preparation

Step 1 : Preparation of Biryani Gravy:

Put a pan on medium flame and add cashew nuts, almond, makhana, badi elaichi, tej patta, cardamom, Shai jeera, sabut dhaniya, laung, cinnamon, black pepper, red chili, poppy seeds and roast them till light brown. Switch off the flame and make a fine paste of this masala.

Step 2 :

Soak poppy seeds in water and make a fine paste of it.

Step 3 :

Make a fine paste of onion. Make fine paste of tomato.

Step 4 :

On a pan, put 100 ml desi ghee and heat it. Add onion paste and cook for 5-6 minutes on a medium flame. Add ginger- garlic paste and cook for 2-3 minutes.

Step 5 :

Add tomato paste and salt as per taste and cook for another 5-6 minutes. Now add a fine paste of masala and poppy seeds and cook for 8-10 minutes. Add cream and cook for another 3-4 minutes.

Step 6 :

Chop the beans and carrot as per the size of your choice (triangular cut is preferred). Put the pan on medium flame and add 50 ml desi ghee.

Step 7 :

Add beans, carrot and green peas and keep turning them. Make powder of Shai Jeera and laung and put same with salt (as per taste).

Step 8 :

Cook the vegetables on low flame for 8-10 minutes by covering pan by its lid. Now mix these cooked vegetables in prepared gravy and leave it aside.

Step 9 : Preparation of biryani rice:

Take small cotton muslin cloth and put badi elaichi, cardamom, black pepper, laung, tej patta and make its potli.

Step 10 :

White Rice - In one vessel put 400 gm rice add the potli, rose water and salt as per taste. Cook rice till it is 80% done.

Step 11 :

Yellow Rice - Put another vessel and add 100 gm rice, turmeric, kewda and salt per taste and cook rice till 80% done.

Step 12 : Preparation of Grill Paneer Tikka:

Cut Paneer in two long pieces and add hung curd, herbs, melted butter and turmeric. Leave it for 30 minutes.

Step 13 :

After that, put the grilled pan and grill from both sides. During grilling, add a bit of chat masala and salt. After grilling, cut paneer into cubes.

Step 14 : Preparation of Biryani:

Put a tawa on low flame heat. On this, put a heavy and big handi.

Step 15 :

In the handi, put desi ghee and one layer of white rice and small portion of yellow rice. Put a layer of prepared gravy and few pieces of paneer. Now again, add a layer of white rice and small portion of yellow rice. Add 2-3 tsp of desi ghee and saffron milk. Now add gravy and top it with pieces of paneer. Put a layer of balance white and yellow rice.

Step 16 :

Add 3-4 tsp of desi ghee and balance saffron milk. Cover handi with its cover and seal it a way that the steam does not go out.

Step 17 :

Now put the flame on medium for 10 minutes and then on low for 10 minutes. Switch it off it and leave for 15 minutes.

Step 18 : Preparation for garnishing:

Put small pan on mid flame and add oil and cut onion (in round circle) and fry till golden brown. Keep then aside. Now in oil, toss cashew nuts and almond and keep aside.

Step 19 : Preparation of Mint Chutney:

Grind mint leaves and garlic and add a bit of salt. Add hung curd in in this paste and put chili flakes on top.

Step 20 : Serving of Biryani:

Take one serving plate and take two serving of biryani from handi in such a way that each serving consists of all layers from top to bottom. Now garnish it with fried golden-brown onion rings, cashews and almonds. Put 2 tsp desi ghee and serve it with mint chutney.
