Barley and Fish Risotto

A succulent treat for the fish lovers out there. The addition of cheese further ups the taste!

Preparation

Step 1 :

Take 1 cup of barley and soak it for a few hours.

Step 2 :

Cut the fish into 1 inch chunks and marinate it with lemon, salt, pepper and minced garlic.

Step 3 :

Boil the peas in water (optional).

Step 4 :

Take 1 tbsp. olive oil in non-stick pan. Add chopped onion and garlic and sauté it. Add the peas.

Step 5 :

Add the barley grains and slowly pour the 2 cups of chicken stock gradually, mixing vigorously and letting barley soak in the moisture.

Step 6 :

When you see stock reduced to half, add fish chunks and gently simmer it covered for another 5-7 minutes. Now add the grated cheese and mix gently. Top with some butter if you wish.
