Quinoa Gulkand Phirni

Preparation

Step 1 :

Take 1/2 cup quinoa in a kadai, add 1 tsp ghee and sauté it for 3-4 minutes.

Step 2 :

Grind the sautéed quinoa to smooth paste by adding some water. Keep aside.

Step 3 :

Take a heavy bottom pan, add 1.5 litre full cream milk to it and let it simmer on a low flame. Once it starts boiling, add the quinoa paste to it. Keep stirring the mixture continuously.

Step 4 :

Cook and continuously stir until the mixture turns creamy and slightly thick, it will take around 15-20 minutes.

Step 5 :

Once the mixture begins to thicken, add few strands of kesar and 1 tsp cardamom powder. Stir the mixture properly and switch of the flame after 3-4 minutes.

Step 6 :

Keep stirring the mixture continuously till it comes down to room temperature.

Step 7 :

Now add 2 tbsp. gulkand to the phirni. You can add more gulkand depending on its sweetness.

Step 8 :

Keep the phirni in refrigerator for about 30 minutes and garnish it with chopped pistachio and rose petals. Serve it chilled.
