Vegetable Quinoa

A nutritious recipe that is loaded with various vegetables. It’s ideal for lunch or dinner.

Preparation

Step 1 :

In a broad pan, heat oil and add jeera.

Step 2 :

Now add onions and turmeric powder.

Step 3 :

Turn the flame to medium and sauté till it turns golden. Add ginger and garlic paste.

Step 4 :

Now, one by one, add the chopped red bell peppers, cauliflowers, peas and spinach.

Step 5 :

Mix well, add all the spice powders mentioned above like chilli, jeera, dhania and pav bhaji spice powder.

Step 6 :

Add the measured water and salt as per taste.

Step 7 :

Add the measured quinoa, turn the flame to low and cover with a lid. Allow the quinoa to get cooked.

Step 8 :

Garnish with coriander leaves, and serve hot with any raita of your choice.
