Coconut Jaggery Kajjaya (pancakes)

A sweet and delicious treat to be enjoyed during Navratri.

Preparation

Step 1 :

Roast the grated fresh coconut in a dry pan for about 5 minutes. To this, add jaggery and mix well for 15 minutes. The jaggery should completely melt and blend with the coconut.

Step 2 :

Add cardamom powder and keep the coconut-jaggery mixture aside.

Step 3 :

In a bowl, mix all-purpose flour (maida) with one teaspoon of cornflour. Add water and make it into a fine dough.

Step 4 :

Pat it into a small chapati. Now, fill it with the coconut mixture and fold the chapati from all sides.

Step 5 :

Flatten this into a small sized chapati again using the wooden stick if necessary.

Step 6 :

Take a pan, put it on the stove and roast the coconut jaggery filled pancakes till they turn golden brown.

Step 7 :

Add cooking oil while roasting. Yummy coconut jaggery pancakes (kajjaya) is ready.
