Garden Fresh Veggie Soup

Healthy and tasty soup made with garden fresh vegetables. The flavour of burnt garlic and chilli gives it a uniqueness similar to that of the quintessential Chinese soups sans the sauces.

Step 1 :

Take a large sized wok and heat 2 tsp cooking oil. Keep the flame on medium

Step 2 :

Once the oil is hot, add finely chopped garlic and sauté it for some time. Once it starts changing colour (burnt red), add the finely chopped green chillis and ginger. Sauté all three for a minute or two. Remember this is the key step since this is what adds flavour to the soup.

Step 3 :

Add the finely chopped spring onion bulbs. This further enhances the flavour. Prefer spring onions over regular onions.

Step 4 :

Once the onions are transparent, add the rest of vegetables and sauté for a couple of minutes.

Step 5 :

Add one litre water followed by salt and let the mixture boil. Remember we want the vegetables to retain their crunchiness and they shouldnt get over boiled.

Step 6 :

After approximately 10-15 minutes of boiling, check if the vegetables are semi cooked. If yes, take out around 3-4 tbsp of the vegetables in a small bowl and let them cool. Once cool, grind them in a mixer grinder. Add this purée back to the boiling mixture. This purée adds little thickness to the soup and replaces cornflour.

Step 7 :

Let the mixture boil for 5-7 more minutes. The thickness of the soup depends entirely on your taste. If you want it thick, boil for a little more time. Add the spring onion greens couple of minutes before you are ready to switch off the stove.

Step 8 :

Switch off the gas stove and add some freshly ground black pepper to further enhance the flavour.

Step 9 :

When serving, squeeze some lemon to add a little zing.

Step 10 :

Your healthy garden fresh veggie soup is ready!
