Thanksgiving Roast Chicken

Traditionally, roasted turkey is a must for Thanksgiving in every household in America. However, if you don’t want to go that big or have fewer people to feed, this roasted chicken is the perfect option. It is easier to cook and you don’t have to wait for Thanksgiving to prepare this recipe. This is my version of the roast chicken.

Preparation

Step 1 : To make brine

Bring the water to boil and add rest of the ingredients and boil for 2 more minutes. Keep it aside to cool. To this, add the water, onion, buttermilk, garlic and thyme and mix well. Now submerge the whole chicken in this mix and keep it aside for 8 hours or overnight.

Step 2 : Roasting

Take out the chicken from brine and wipe it with a paper towel. Mix the chopped herbs in butter. Now rub the butter mix under the skin well so that it coats the whole chicken. Preheat oven on 190C. Tie the chicken leg together and put on a wire rack that should rest on a roasting pan and add a cup of chicken stock. The drippings are collected in the pan which can be used for the gravy later. Roast in the oven for 90 minutes, turning halfway so that it is evenly cooked.

Step 3 : To make stuffing

To a pan add butter, chopped onion, garlic and sauté. Then add chopped celery and sauté. Now to this, add the gizzards and sausages and sauté for a minute till it turns brown. Add croutons and stock and let it soak. Add salt to taste. Put it an oven safe dish and roast for 10 minutes at 190C.

Step 4 : To make gravy

In a sauce pan, add butter and flour and make the roux. Now add stock and the dripping mixture from the oven to it. Stir quickly so that there are no lumps. Bring to boil and take it off the heat.

Step 5 : Serving

Use a large knife to cut the chicken into pieces and serve with the stuffing and gravy. You can also add some mashed potatoes, etc., to make it a full Thanksgiving meal version.
