Preparation
Step 1 :
Grease the spring form (cake tin) with butter. Pre-heat oven at 170?C.
Step 2 :
Cover the bottom part of spring form with an aluminium foil to avoid butter dripping on the oven.
Step 3 :
In a food processor or zip lock plastic, place the graham crackers/biscuits. Blend/mash it until soft.
Step 4 :
In a mixing bowl, add the mashed cracker/biscuits, add 3 tbsp. melted butter, 1 tbsp. sugar, ¼ tsp cinnamon powder and a pinch of salt. Mix it well.
Step 5 :
Pour the cracker/biscuits mixture into the greased spring form.
Step 6 :
Spread it evenly and press it. Bake the cracker in the oven at 170?C for 5 minutes.
Step 7 :
Remove it out and let it cool down. In a mixing bowl, beat the cream cheese slowly for 3 minutes until it is creamy.
Step 8 :
Add sugar and beat it for another minute. Keep beating the cream cheese and sugar at a very low level. While doing that, add the egg into the cream cheese one by one. Beat them at a lower level to avoid too much air inside the mixture. Beat them for another 2-4 minutes.
Step 9 :
Sift the all-purpose flour and salt. Add the vanilla extract. Mix it well.
Step 10 :
Add the crème fraiche, grated lemon zest and grated orange zest.
