A treat to look at and eat, this special tomato capsicum uttapam can be enjoyed anytime hunger comes calling!

Preparation

Step 1 :

Chop green chillies and onions.

Step 2 :

Add to batter along with mustard seeds, salt & pepper and mix well.

Step 3 :

Slice the bell pepper and tomatoes into large wheels - slightly roast them in a butter greased pan for 2 mins.

Step 4 :

Grease a pan with oil and spread one cup mixed batter for making uttapam.

Step 5 :

After 2 minutes flip the uttapam.

Step 6 :

Decorate the uttapam with the roasted bell pepper and tomato slices.

Step 7 :

Crack an egg right at the centre to make a poach.

Step 8 :

Cover for 2 mins and it's ready to serve.

Step 9 :

You can garnish the uttapam with chopped leeks and grated mozzarella.

Step 10 :

Repeat the same procedure for the 2nd uttapam.
