Doodh Puli is one of the famous dessert prepared on the occasion of Makar Sankranti in West Bengal. It is prepared with the date palm jaggery filled with mawa and coconut.

Preparation
Step 1 :
Mash the sweet potato and make sure there are no lumps. If you want you can also use a grater to finely grate it.
Step 2 :
Mix the flour in it and make a dough.
Step 3 :
Dry roast the coconut for few minutes and then add jaggery, now add mawa and rost it for few minutes until you get some nice aroma. Add the cardamon powder and let it cool.
Step 4 :
Now take small portion of dough (a small lemon sized), flatten it using your palm and make a cavity to fill the prepared mawa mixture.
Step 5 :
Seal the ends and give it shape like a rolling pin and deep fry them in hot oil till golden brown.
Step 6 :
Boil milk till it reduce to thick consistency. Add some roasted mawa and cardamom powder in it.
Step 7 :
Add the prepared pulis in it and let it boil for another 3-4 minutes. Turn off the gas ,now add melted jaggery in it.(Never add jaggery while cooking, else it will curdle the milk. Always add it after switching off the gas and do not cook it again )
Step 8 :
Garnish it with chopped almonds and pistachios.
