Preparation
Step 1 :
Select sour, hard and unripe mangoes which are used for pickles wash them thoroughly and wipe them dry with a clean cloth.
Step 2 :
Cut the mangoes into pieces.
Step 3 :
Remove the seeds and paper like layer on the mango pieces.
Step 4 :
Wash and grate mango ginger finely.
Step 5 :
Grind mustard seeds, fenugreek seeds and cumin seeds into a fine powder.
Step 6 :
Take a wide mixing bowl and put the mango pieces into it. Add turmeric powder, red chilli powder,powdered Rock salt, mustard seeds, fenugreek and cumin seeds powder, garlic paste and finely grated mango-ginger.
Step 7 :
Mix all the ingredients thoroughly with hand.
Step 8 :
Add sesame oil and mix thoroughly and add remaining peeled garlic cloves, mix well.
Step 9 :
Cover it and leave it for one or two days. After two days mix the pickle once and taste for salt. If needed you can add some salt and oil and mix it again.
Step 10 :
Transfer the pickle into clean airtight container. You can store this Pickle for one year.
