Preparation
Step 1 :
In a sauce pan, take water and bring it to a boil. Add the coffee to it and turn off the flame after a few seconds. Filter out the remaining coffee if needed, and keep the coffee solution aside.
Step 2 :
The warm coffee solution makes the cake soft and moist and adds to the richness of the cake. You can preheat the oven at 180 degrees for 10 to 15 minutes.
Step 3 :
Beat an egg in a bowl and then add the coffee solution to it. Make sure the solution is warm and not hot. Add the butter and beat these together. Add the vanilla essence, if you want to.
Step 4 :
In a separate bowl, get your dry ingredients (cocoa powder, Flour/maida, Baking soda, baking powder) and sieve them.
Step 5 :
Mix and fold in the dry ingredients with the wet ingredients. Make a smooth batter and keep it aside.
Step 6 :
Grease a tin and pour in the batter. Bake the cake for 20 to 30 minutes and check it with a toothpick/knife.
Step 7 :
For the fudge, Take the butter, cocoa powder and sugar and heat them in a saucepan until they form a smooth cream. Make sure the butter doesn't burn. Add in a little milk if needed.
Step 8 :
To decorate, cut the cake in half the spread the fudge on top and in between the layers.
Step 9 : For Serving
Keep it in the fridge for an hour until it cool and sprinkle some chocolate shavings on top. Or serve it hot with hot chocolate drizzled on it! This cake goes really well with vanilla ice cream as well.
