Step 1 :

Preheat the oven to 180°C, fan oven 160°C, Gas Mark 4. Grease and line a round 20 cm (8 inch) loose-based cake tin.

Step 2 :

Whizz the muesli in a food processor until finely ground. Think of the texture of ground almonds, so keep processing in short bursts until it reaches that consistency.

Step 3 :

Cream the butter and sugar into a large bowl until light and fluffy. Gradually add the eggs, beating well between each addition.

Step 4 :

Stir in the ground muesli and baking powder, and then add the grated zest from 1 lemon and the juice of half a lemon.

Step 5 :

Get your muscles going and mix well, then spoon into the prepared tin, leveling the surface.

Step 6 :

Bake on the middle shelf of the oven for 45 to 50 minutes. Check the lemon muesli cake after 45 minutes you will know it’s ready when a skewer comes out clean.
